Abstract
Japanese cuisine, or Washoku, has been registered as a UNESCO Intangible Cultural Heritage. The application cited four characteristics: ① respect for diverse and fresh ingredients and their natural flavors, ② a healthy diet with excellent nutritional balance, ③ expression of the beauty of nature and the changing seasons, and ④ close ties to annual events such as New Year's. Japanese cuisine, or Washoku, is well-known in Europe and America and attracts a lot of interest from foreign tourists, but can you really explain your own country's food culture properly? In the first chapter, we will re-examine what Washoku is, and in the second chapter, we will trace its history. Furthermore, in the third chapter, as a practical section, we will lecture on how to make dashi (broth) and cook rice, as well as representative home-style dishes. We hope you will learn about the wonderful origins and charm of Washoku and feel the Japanese spirit embodied within it.
