Asafumi Yamashita
Farmer, Owner of Yamashita Farm in Paris
Born in 1953. He studied at Ecole du Louvre in France from Tamagawa Gakuen in 1976, and started his own bonsai business in Chapet, Yvelines, near Paris, in 1989. After closing his bonsai business, he started growing Japanese vegetables in 1996 at the age of 43. A few years later, he became a vegetable grower highly praised by the grand chefs of three-star restaurants in Paris. His reputation has spread not only to France, but also to all of Europe, including the world's best restaurant, NOMA, and even to North America, where he received rave reviews in the New York Times. The vegetables he grows are called "the world's best Japanese vegetables," "haute couture vegetables," "miracle turnips," etc. Currently, he is making efforts to establish "Yamashita Academy," an agricultural college and Japanese culinary school in the suburbs of Paris, to train agricultural producers and chefs for cultural exchange between Japan and France.
