Abstract

The definitive book for making and enjoying authentic Japanese sweets "Nerikiri" at home! From preparing the bean paste to shaping and coloring, the recipe is explained in detail with about 700 process photos. Even beginners can make beautiful sweets without hesitation. The first lesson book from "HALE", a popular Nerikiri specialty school in Kobe, is now available! Two motifs, classic and modern, are introduced for each month, reflecting the atmosphere and events of the four seasons. For example, the classic motif for March is "peach blossoms", and the modern motif is "hina dolls". You can enjoy Nerikiri full of seasonal feeling throughout the year, such as "fireworks" and "sunflowers" in August, "autumn leaves" and "glossy persimmons" in November, and "white camellias" and "Setsubun demons" in February. This book starts with an explanation of the points that beginners tend to have trouble with, and carefully introduces how to make and tips with easy-to-understand process photos. You will surely be impressed with the results of your "first Nerikiri" that you finish by following the steps. Experience the world of homemade Japanese sweets that are gluten-free, egg-free, and dairy-free, and are good for your body!

Author’s Information

She runs a specialized Nerikiri class called "HALE" on Rokko Island in Kobe City. After learning about Nerikiri due to her daughter's allergies, she began giving lessons as an instructor. Her lessons, which generously teach how to make beautiful and delicious Nerikiri at home, a traditional Japanese culture that changes with the seasons, became popular. She started online classes in April 2020, and in 2022 started the cultural salon "HALE and Learning Place," which has a low barrier to entry for casually learning about traditional Japanese culture. She provides instruction to beginners, aspiring instructors, and Japanese confectionery shop owners. In October 2021, she won the Excellence Award and Suzuki Munehiro Award in the Tsurezuregusa Practical Works category at the "Kyoto Confectionery Exhibition." This is his first book. https://hale-nerikiri.com Instagram @hale_works
