Abstract

Gelato, ice cream, sorbet. Not only are they homemade and healthy, but you'll be amazed at their gentle melting texture, refined flavor, and delicate deliciousness. Use the Kai ice cream maker, the most popular household ice cream maker, and keep it in the freezer. All you have to do is put in the ingredients and turn it on. It'll be ready in about 20 minutes! If you don't have an ice cream maker, we'll also introduce easy ways to make them using a food processor or handy blender. Chapter 1, "Gelato," features 18 flavors, including vanilla milk, strawberry, milk chocolate, matcha and yuzu, and meringue. Chapter 2, "Ice Cream," features 16 flavors, including vanilla ice cream, cookies and cream, lemon, Earl Grey, chestnut, and black sesame. Chapter 3, "Sorbet," features 14 flavors, including orange, melon, mango, apricot kernel, brown sugar, and ginger. Chapter 4, "Ice desserts you can make without an ice cream maker," and Chapter 5, "Ice desserts you can make without an ice cream maker."

Author’s Information

Pastry and cooking researcher. International Chinese medicine nutritionist. After working at Western-style pastry shops and restaurants in Tokyo, she moved to France. During her four-year stay, she graduated from the Ritz Escoffier Diplome cooking school, gained experience in French restaurants and cafes, and learned French home-made pastries and cooking in a French home. After returning to Japan, she is active in a wide range of fields, including books, magazines, advertising, and corporate menu development. She currently runs Osier, a small-group French-based cooking and pastry school. As she grew older, she realized that "our bodies are made of what we eat," and studied Chinese medicine nutrition, which she had always been interested in, to become an international Chinese medicine nutritionist. She proposes recipes that are easy to make at home and gentle on the body, while still keeping the basics in mind. Her books include "Mochi Puru Recipes: 70 Sweets and Desserts to Enjoy with a Mochi Mochi and Jiggly Texture" (PARCO Publishing), "Mochi Yorimi Jar Sweets" (Shufu no Tomosha), and many others.
