Abstract

"This issue is a guide book that has continued to look at the history of restaurants in Tokyo, which has been 20 years since its inception.
Professionals select the most notable shops, evaluate them by their real names, and talk about them in a roundtable discussion. We have maintained an original style that cannot be imitated anywhere.
This time, due to the influence of Corona, the publication was delayed by 4 months, but we are proud that the content can meet the feelings of everyone who has been waiting for us.
Former members Kei Kurusu, the king of gastronomy, and Hikari Hayakawa, a leading sushi critic, also participated as guests. Mr. Kurusu is in a roundtable discussion, and Mr. Hayakawa is in the sushi genre, showing the same sharpness.
At the roundtable discussion at the end of the book, we mourn Mr. Seigo Mitani and Mr. Tomoei Kitayama, and discuss what the restaurant will be like from the perspective unique to this book.
