Based in Nagaoka City, Niigata Prefecture, Echigoichi Co., Ltd. is a dedicated miso maker that has won numerous top awards at the National Miso Judging Competition, the Niigata Prefecture Miso Judging Competition, and other contests, and is highly regarded for its craftsmanship.
She has posted more than 1,400 recipes, mainly miso soups made with about eight distinctive misos produced from 100% Japanese ingredients, along with other miso dishes and fermented foods such as shio koji. Her account has over 58,000 followers.
