Abstract
Den is a two-star Michelin restaurant that ranks among the top in Japan. The owner says that the dishes served at the restaurant are not formal Japanese cuisine, but rather "home cooking." This book introduces 100 of Den's "everyday Japanese dishes" that don't require any special skills and can be made with everyday ingredients.
Author’s Information
After graduating from high school, he trained at the long-established restaurant "Kagurazaka Uotoku" and opened "Den" in Jimbocho, Tokyo in 2008. In the third year, it received one star in the "Michelin Guide Tokyo 2011". Since then, it has maintained two stars in recent years and is expected to receive a Michelin Green Star in 2022. In 2016, it moved to Jingumae. (This data was published at the time this book was published.)
