Abstract

A traybake is a square cake baked thinly on a baking sheet in the oven.
It is a baked good unique to England, the home of afternoon tea, where people can enjoy tea time by baking pastries casually without using a mold.

The author, who is popular for her butter-free pastry recipes, introduces us to traybake recipes that can be easily made with oil.

In addition to traditional English pastries such as shortbread and Victoria Sandwich Cake, popular brownies and cheesecakes, this book also includes plenty of cakes, cookies, and tarts made with fruits and vegetables.

Born in Chiba Prefecture. Confectionery researcher. She runs a confectionery school "Kouglof" at her home. Studied confectionery under Makiko Fujino, Fuyuko Kondo, and French patissier Santos Antoine. She proposes recipes in books and magazines, focusing on pastries based on traditional French pastries but without butter.
