Author’s Information
In 1968, the couple opened a coffee shop in Sanya, Tokyo, where Fumiko's parents live, and in 1972 they began roasting their own coffee, naming the shop "Cafe Bach." Mamoru is a leading theorist in the coffee world, and has written many books. Even now at over 85 years old, he still trains the next generation of coffee brewers every day, and has opened many independent cafes. He continues to spread the word about "the right coffee" all over Japan. Fumiko heads the confectionery and bread department, which she established in 1990, and is always researching sweets and bread, the perfect companion to coffee.
